About the business and the 

Busy Irish bar on Acland looking for  for talented chefs to make that next step in their career for this prime location on Acland  in St Kilda. Jimmy O Neill's is a modern twist on the Irish pub mixing some modern food with some of the more traditional Irish Fare. The emphasis will be on fresh food & local produce. We are a busy venue with room for expansion. Sponsorship available for the right candidate.

 

Job tasks and responsibilities

 

The Junior sous  need to demonstrate the following ;

  • Passionate about food & a good knowledge of local food trends as well as some knowledge of traditional Irish/European cuisine
  • Competency in menu writing & creation
  • Good knowledge of kitchen hygiene & HACCP requirements
  • Good knowledge of kitchen budgeting

 

Skills and experience

 

We also operate a food truck and outside catering business so you may be required to work on the food truck/ at large events if required. The following daily tasks must also be done.

  • Set up the kitchen with cooking utensils and equipment, like knives, pans and kitchen scales
  • Study each recipe and gather all necessary ingredients
  • Cook food in a timely manner
  • Delegate tasks to kitchen staff
  • Inform wait staff about daily specials
  • Ensure appealing plate presentation
  • Supervise Cooks and assist as needed
  • Slightly modify recipes to meet customers' needs and requests (e.g. reduce salt, remove dairy)
  • Monitor food stock and place orders
  • Check freshness of food and discard out-of-date items
  • Experiment with recipes and suggest new ingredients
