Vineataly, an Italian enoteca located in the heart of Dalkeith, a vibrant mix between modern and classic, is on the lookout for a skilled and dedicated Sous Chef to join our vibrant kitchen team.

Position: Sous Chef


 

Responsibilities:

- Assist the Head Chef with all kitchen operations, including food preparation and execution.

- Supervise and inspire kitchen staff, ensuring high standards of food quality, consistency, and presentation.

- Manage ordering and stock rotation to minimize waste and maintain optimal ingredient levels.

- Ensure a clean, organized, and efficient kitchen environment in compliance with health and safety regulations.

- Collaborate with the culinary team to develop innovative dishes while upholding the restaurant's culinary standards and vision.

- Help maintain food costs and labor budgets while maximizing profitability.

- Actively engage in menu tastings, special events, and promotional activities to highlight our culinary excellence.


 

Requirements:

- Proven experience as a Sous Chef or senior line cook in a high-volume setting, preferably with a focus on Italian cuisine.

- Strong culinary skills and a deep understanding of Italian cooking techniques, ingredients, and flavors.

- Excellent leadership skills with the ability to motivate and inspire a team.

- Solid organizational and time management abilities, capable of multitasking in a fast-paced environment.

- A creative mindset with a passion for culinary innovation and excellence.

- Strong communication and interpersonal skills.

- Culinary degree or equivalent certification preferred.
