We are seeking an experienced and passionate Chef to join our LA PORCHETTA SHEPPARTON team.
The successful candidate will be responsible for preparing and cooking authentic Italian dishes, leading the kitchen team, and maintaining high standards of food quality and presentation.
ABOUT THE POSITION:
The Chef will be primarily responsible for their cooking station and coordinating the work of the other kitchen members to ensure they deliver our food at consistent, reliable, and excellent standards to our dedicated patrons.
Our Chefs will further engage in delegation, training, maintaining appropriate stock volumes, problem solving and collaboration with other teams.
RESPONSIBILITIES and DUTIES:
• Prepare and cook a variety of Italian-dishes, in Ala Carte setting and Bulk cooking, ensuring high standards of quality and presentation.
• Manage food preparation and ensure the timely delivery of dishes during service hours.
• Maintain a clean, organized, and efficient kitchen workspace in accordance with health and safety regulations.
• Monitor inventory levels, place orders for ingredients and supplies, and manage stock rotation to minimize waste.
• Train and supervise junior kitchen staff, ensuring they adhere to kitchen protocols and maintain high culinary standards.
• Uphold food safety and hygiene standards at all times, ensuring compliance with relevant regulations.
• Strong understanding of culinary techniques, kitchen operations, and food safety standards.
• Excellent organizational and time management skills, with the ability to work efficiently in a fast-paced environment.
• Strong communication and leadership skills, with the ability to work collaboratively with a diverse kitchen team.
• A positive attitude, dedication to continuous improvement, and a commitment to delivering an exceptional fine dining experience.
EXPERIENCE & QUALIFICATIONS:
• Australian Citizens and Permanent Residents are encouraged to apply
• Certificate III and IV in Commercial Cookery that has obtained in Australia
• Minimum 2 to 3 years experience as a Chef in fine dinning restaurant environment, preferably with experience in Italian cuisine.
• Strong communications skills
• Leadership and team management skills that can work unsupervised
• Strong knowledge of cooking pasta, steaks and other Italian dishes with excellent cooking skills
• Ability to work in a fast-paced environment in Ala Carte setting and Bulk Cooking
