Our 200-seat Mediterranean tapas restaurant, Rustico at Hay Shed Hill, is a vibrant lunchtime destination offering a renowned 5-course degustation menu, private dining, and an unforgettable wedding venue for 40 weddings each season.

Key Responsibilities:

 

Maintaining and controlling performance standards, food production, presentation, procedures and service times as defined by the Head Chef;

  • Assisting the Head Chef to document, cost and standardise all menu items;
  • Initiate cooperation with the whole kitchen team in developing food ideas;
  • Evolve current dishes as and when required by product supply;
  • Sustain par levels and work within structured production for weddings and events as per the key dates, documents and scheduling. 
  • Hygiene, ensuring and adhering to the cleaning, sanitising and maintenance schedule, including the correct use of chemicals are used both on-site and in the kitchen;
  • Ordering and communicating stock levels as per the standards of the Head Chef and the ordering systems;
  • Applying the correct storage of all goods and stock to ensure safe handling and minimal waste.

Requirements:

 

Certificate in Commercial Cookery

Technical Skills - High-level culinary skills with experience in similar environments.

Reliable Transport - A car is essential for travel to our rural location.
